INGREDIENTS:
- Semolina 1cup or Idly/Dosa Batter 2cups
- Yoghurt 1 cup
- Baking Powder, a small pinch
- Onion 1 large, finely chopped
- Green chilis 2 chopped
- Coriander leaves, a handful chopped
- Oil as needed
- Salt as required
METHOD:
Serving Size: 5-6
In a bowl, mix onions, chilis, salt, and coriander leaves.
If you are using semolina, mix it with yoghurt, water, and salt, and let the mixture rest for 20 minutes. Add a pinch of baking powder to the mixture before preparing uthappam.
Heat a skillet and brush it with oil. Take a ladle of the batter and spread it over the pan. The uthappam should be thick. Sprinkle the onion mix over it.
Drizzle oil generously. Press the onion mix with a spatula so it sticks to the batter.
Cover and let it cook till the bottom gets crispy.
Flip over and cook till the other side turns golden.
Serve with coconut chutney and coriander-mint chutney.
