Savoury Potato Croquettes (Aloo Tikki)

 INGREDIENTS:

  1. Potatoes 4-5 parboiled, peeled and mashed
  2. Carrots 1 grated
  3. Peas 1 cup parboiled and crushed
  4. Coriander leaves a handful chopped
  5. Green Chilis 2 chopped
  6. Ginger grated 1 tsp
  7. Chaat masala 1 tsp
  8. Red chili powder 1 tsp
  9. Corn flour 4 tbsp 
  10. Breadcrumbs 2 tbsp
  11. Salt as required
  12. Oil for frying

METHOD:


Serving Size: 4-6

In a bowl take mashed potatoes, peas, coriander leaves, chaat masala, chopped green chilis, grated ginger, red chili powder, corn- flour, breadcrumbs and salt.

Mix well and divide the mixture into 12 equal sized balls.

Gently flatten into tikki shape and keep aside.

Heat oil in a pan and shallow fry aloo tikkis till both sides are golden brown in color. You can deep fry or air fry them for a healthier version.

Once done transfer the aloo tikkis on a kitchen towel so that excess oil is absorbed.

Place the tikkis on a serving plate and pair them with tomato ketchup or tamarind chutney.

Lyonnaise Potato

  INGREDIENTS: Potatoes 500 grams peeled and sliced into 1/4th" thick roundels Butter 3 tbsp Vegetable oil 3 tbsp Onions 4 thinly sliced Paprika powder 1/2 tsp Parsley 1/2 tsp Black Pepper Powder to taste Coriander stalks 1 tsp finely chopped  Salt as per taste METHOD: Serving Size: 3-4 Wash the potatoes thoroughly. Spinach And Cottage Cheese (Palak Paneer) Paratha

  INGREDIENTS: Spinach Leaves 500 gram Cottage Cheese (Paneer) 400 gram grated Onion 3 tbsp chopped Cumin Seeds 1 tsp Ginger grated 1 tsp Green Chili 2 chopped Red Chili Powder 1/2 tsp Coriander Powder 1 tsp Coriander Leaves chopped a handful Salt to taste Sugar 1/2 tsp Oil 4-5 tbsp Whole Wheat Flour 2 cups Water as needed METHOD: Serving Size: 6-7 Blanch the palak leaves by immersing them in hot water for 4-5 minutes.
