Pan-Fried Basa with Smoky Tomato Beans

 INGREDIENTS:

For the Fish:

  1. Basa Fillets 2 
  2. Smoked Paprika, 1/2 tsp
  3. Cumin Powder, 1/4 tsp
  4. Black Pepper Powder, 1/4 tsp
  5. Salt to taste
  6. Oil, 1 tsp
  7. Lemon Juice, 1 tsp
For the Smoky Tomato Beans:
  1. Butter Beans or White Cannellini Beans, cooked, 1 cup
  2. Tomatoes, 200 grams, chopped
  3. Onion, 1, finely diced
  4. Garlic Cloves, 3-4, minced
  5. Smoked Paprika, 1 tsp
  6. Cumin Powder, 1/2 tsp
  7. Black Pepper, 1/4 tsp
  8. Lemon Juice, 1 tsp
  9. Chicken Stock or Water, 1 cup
  10. Olive Oil, 1 tbsp
  11. Salt to taste
  12. Parsley or Coriander, chopped, 1 tbsp
  13. Rice Flour, 1 tbsp for a light crust

METHOD:

Pat the fillets completely dry. Mix smoked paprika, cumin, black pepper, and salt. Rub the mixture over both sides of the fish. Sprinkle with lemon juice and rest for 10 minutes. For a lightly crisp crust, dust very lightly with rice flour and shake off the excess.

Heat olive oil in a skillet over medium heat. Add the diced onion and garlic; sauté for 3–4 minutes until soft and translucent. 

Stir in the chopped tomatoes, smoked paprika, cumin, and a pinch of salt. Cook for 5 minutes until the tomatoes soften and the mixture thickens. Stir in the pre-boiled beans and stock. Stir gently and simmer for 5–7 minutes, so the beans can absorb the smoky flavor. Lightly mash a few beans against the side of the pan if you prefer a thicker, creamier sauce. Season with salt and finish with lemon juice.

Heat oil in a non-stick skillet over medium heat. Place the fillets in the pan and cook for about 3–4 minutes per side, until a crisp, golden crust forms.

Spoon a generous layer of the warm, smoky tomato beans into a shallow bowl. Nestle the golden basa fillets right on top. Garnish with chopped fresh parsley, freshly cracked pepper, and a squeeze of fresh lemon juice.

Serve hot with crusty toasted bread, steamed rice, or a simple green salad.

NOTES:

This Mediterranean-inspired recipe combines pan-fried fish with tomatoes, olive oil, beans, and herbs commonly used in Mediterranean cooking. Rather than representing a traditional regional dish, it is a modern, home-style creation inspired by Mediterranean flavors.


The dish is traditionally prepared with butter beans or white cannellini beans. I used kidney beans instead, as they were readily available. They add a creamy texture and mild flavor that complement the smoky tomato sauce.
