Spiced Flattened Rice (Poha)

 INGREDIENTS:

  1. Poha (rice flakes) 2 cups
  2. Onion 2 medium finely chopped
  3. Potato 2 small peeled and finely chopped
  4. Carrot 1 small cubed
  5. Capsicum 1 finely chopped
  6. Mustard seeds 1/3rd tsp
  7. Curry leaves 8-10
  8. Green chilies 2 finely chopped
  9. Peanuts 2tbsp
  10. Turmeric powder 1/4th tsp
  11. Lemon juice 2 tsp
  12. Coriander leaves 2 tbsp finely chopped
  13. Oil 2 tbsp
  14. Salt to taste

METHOD:

Serving Size 4

Rinse poha in running water in a strainer or colander. Make sure not to overdo the rinsing. This will make them mushy. Rinsing poha in water softens them as they absorb water. Sprinkle turmeric powder and salt as required in poha. Gently mix with your hands or with a fork.

Heat oil in a pan and fry peanuts until they become crunchy. Set aside. 

In the same pan sauté the potatoes until they turn golden brown and crisp. Remove them and set aside with the roasted peanuts.

In the same pan add mustard seeds. Add the chopped onions and sauté them until they become translucent. 

Add in the carrot and capsicum along with salt. Cook until they turn soft.

Add the curry leaves, green chilies and the potatoes. Add poha and roasted peanuts. Mix gently. Cover the pan with a lid for poha to get steamed for about 2 minutes on low heat. Sprinkle lemon juice and mix gently.

Garnish with chopped coriander leaves and serve hot.

Lyonnaise Potato

  INGREDIENTS: Potatoes 500 grams peeled and sliced into 1/4th" thick roundels Butter 3 tbsp Vegetable oil 3 tbsp Onions 4 thinly sliced Paprika powder 1/2 tsp Parsley 1/2 tsp Black Pepper Powder to taste Coriander stalks 1 tsp finely chopped  Salt as per taste METHOD: Serving Size: 3-4 Wash the potatoes thoroughly. Hashbrowns

  INGREDIENTS: Potatoes 2 large size Onion 1 large sliced Garlic Powder 1 tsp Corn flour 1 tbsp Rice flour 1 tbsp Eggs 2 large (Optional) Oil 3 tbsp Butter 3 tbsp Salt as per taste Black pepper powder 1/2 tsp METHOD: Serving Size: 3-4 In a fry pan heat 1 tbsp butter and sauté the onion until golden brown and reserve.  Peel and grate the potatoes on a large-holed box grater. Rinse the grated potatoes well until the water runs clear.  Drain the potatoes and place them on a clean towel. Twist the towel to remove as much moisture as possible. Transfer the grated potatoes to a bowl. Add caramelized onion, garlic powder, salt, black pepper powder and garlic powder. Break the eggs (if using) and add corn flour and rice flour.
