INGREDIENTS:
FOR THE DOUGH
- Whole wheat flour 1 cup
- All-Purpose flour 1 cup
- Salt to taste
- Oil 2 tbsp
- Water as required
FOR THE FILLING
- Potatoes 2 large boiled and grated
- Onion 1 Large finely chopped (optional)
- Ginger 1 inch grated
- Green chilies 2-3 finely chopped
- Coriander leaves 1 tbsp chopped
- Coriander powder 1/2 tsp
- Garam masala powder 1 tsp
- Red Chili powder 1 tsp
- Salt to taste
- Oil
METHOD:

In a mixing bowl add whole wheat flour, all-purpose flour, salt and 2 tbsp oil. Mix well to form a crumb like texture. Add water as required and knead into a soft and smooth dough. Cover with a muslin cloth and let it rest for 30 minutes.
In a bowl take grated potatoes, green chilies, coriander leaves, salt, coriander powder, chili powder, garam masala powder. Mix well.
Divide the prepared dough into 8 equal portions and form small lemon sized balls. Roll them into a 4-inch disc with a rolling pin and add the prepared stuffing in the center. Bring the edges together and seal. Roll into a thick circular disc of 8-9 inches.
Heat a griddle. Add the prepared paratha and roast each side for 30 seconds. Drizzle oil and cook till brown spots appear on both sides.
Serve aloo paratha hot with mango pickle and yogurt.
