INGREDIENTS:
- Semolina (Sooji / Rawa) 1 cup
- Tomato 3 pureed and 2 chopped
- Onion 2 finely chopped
- Green Chilies 2 finely chopped
- Oil 3 tbsp
- Mustard Seeds 1 tsp
- Urad Dal 1 tbsp
- Curry Leaves 1 sprig
- Ginger 1 inch grated
- Red Chili 2
- Salt to taste
- Sugar 1/2 tsp
- Water 4 cups
- Peanuts 2 tbsp, roasted
- Cashew Nuts 6-8
METHOD:

Dry roast the sooji /rawa in a pan on medium flame until it slightly changes its color. Remove and set aside.
Heat oil in a pan. Add red chili, mustard seeds, urad dal, curry leaves and sauté for a few seconds.
Add the grated ginger and stir fry. Add onions and green chilies and cook till the onions become soft and translucent.
Add the tomato puree and sauté for 2-3 minutes on medium heat.
Add chopped tomatoes, sugar and salt. Mix everything properly. Then add water and bring it to a boil.
Add semolina slowly so there are no lumps forming by stirring continuously.
Add the fried peanuts, drizzle ghee and give it a final mix.
Garnish with cashew nuts and coriander leaves (optional).
Serve tomato semolina upma with sambar and coconut chutney.
