Tomato Semolina Upma

INGREDIENTS:

  1. Semolina (Sooji / Rawa) 1 cup
  2. Tomato 3 pureed and 2 chopped
  3. Onion 2 finely chopped
  4. Green Chilies 2 finely chopped
  5. Oil 3 tbsp
  6. Mustard Seeds 1 tsp
  7. Urad Dal 1 tbsp
  8. Curry Leaves 1 sprig
  9. Ginger 1 inch grated
  10. Red Chili 2
  11. Salt to taste
  12. Sugar 1/2 tsp
  13. Water 4 cups
  14. Peanuts 2 tbsp, roasted
  15. Cashew Nuts 6-8 

METHOD:

Serving Size: 3-4

Dry roast the sooji /rawa in a pan on medium flame until it slightly changes its color. Remove and set aside. 


Heat oil in a pan. Add red chili, mustard seeds, urad dal, curry leaves and sauté for a few seconds.

Add the grated ginger and stir fry. Add onions and green chilies and cook till the onions become soft and translucent.

Add the tomato puree and sauté for 2-3 minutes on medium heat. 

Add chopped tomatoes, sugar and salt. Mix everything properly. Then add water and bring it to a boil.

Add semolina slowly so there are no lumps forming by stirring continuously. 

Add the fried peanuts, drizzle ghee and give it a final mix. 

Garnish with cashew nuts and coriander leaves (optional).

Serve tomato semolina upma with sambar and coconut chutney.
