INGREDIENTS:
- Semolina (Sooji / Rawa) 1 cup
- Tomato 4 pureed and 2 chopped
- Onion 2 finely chopped
- Green chilies 2 finely chopped
- Oil 3 tbsp
- Mustard seeds 1 tsp
- Urad dal 1 tbsp
- Curry leaves 1 sprig
- Ginger 1 inch grated
- Red chili 2 nos.
- Salt to taste
- Sugar 1/2 tsp
- Water 4 cups
- Peanuts 2 heaped tbsp roasted
- Cashew Nuts 6-8
METHOD:
Serving Size: 3-4
Dry roast the sooji /rawa in a pan on medium flame until it slightly changes its color. Remove and set aside.
Heat oil in a pan. Add red chili, mustard seeds, urad dal, curry leaves and sauté for a few seconds.
Next add the grated ginger and stir fry. Add onions and green chilies and cook till the onions become soft and translucent.
Next add the tomato puree and sauté for 2-3 minutes on medium heat.
Add chopped tomatoes, sugar and salt. Mix everything properly. Then add water and bring it to a boil.
Next add semolina slowly so there are no lumps forming by stirring continuously.
Add the fried peanuts and switch off the flame. Drizzle ghee and give it a final mix.
Garnish with cashew nuts and coriander leaves (optional).
Serve tomato semolina upma with sambar and coconut chutney.
