INGREDIENTS:
- Spring onions 8-10 stalks chopped
- Basmati Rice (cooked and cooled) 2 cups
- Capsicum 1 chopped
- Green Peas 1/4 cup
- Carrot 1 thinly sliced
- French Beans 10-15 chopped
- Onion 1 large chopped
- Garlic 10-12 minced
- Oil 2 tbsp
- Butter 1 tbsp
- Salt to taste
- Pepper powder 1 tsp
METHOD:
Serving Size: 3-4
Heat the oil and butter in a pan. Add garlic and onions. Cook until fragrant.
Add the capsicum, peas, carrots, beans, and spring onions. Cook for 5-6 minutes.
Add rice, salt and pepper powder. Toss well and give it a good mix.
Remove from the heat and garnish with spring onions, topped with a fried egg.
