INGREDIENTS:
- Spring onions 1 bunch chopped
- Basmati Rice (cooked and cooled) 2 cups
- Capsicum chopped 1 no.
- Green peas 1/4th cup
- Carrot 1 grated
- Onion chopped 1 no
- Garlic 10-12 chopped
- Oil 2tbsp
- Butter 1tbsp
- Salt to taste
- Pepper powder 1tsp
METHOD:
Serving Size: 3-4
Heat oil and butter in a pan Add garlic and onions. Cook for 2 minutes.
Add the capsicum, peas and spring onions. Cook for 5 minutes. Add salt to the vegetables.
Add rice, grated carrot and pepper powder. Toss well and give it a good mix.
Remove from heat and garnish with spring onions. Serve spring onion rice hot with raita and papad.
