INGREDIENTS:
- Chicken Breasts, boneless (cut into cubes) 500 grams
- Oregano 1 tsp
- Dried Parsley 1 tsp
- Salt as per taste
- Black Pepper Powder 1/4 tsp
- Butter 2 tbsp
- Oil 2 tbsp
- Garlic 2 tbsp minced
- Lemon Juice 2 tbsp
METHOD:

In a small bowl, combine the chicken pieces with oregano, parsley, salt, and pepper powder. Toss well to coat evenly.
Heat a large skillet over medium heat. Melt 2 tbsp butter and oil. Once melted, add the chicken pieces to the pan. To ensure even cooking, do not overcrowd the pan.
Cook for 8-10 minutes, flipping halfway through or until all sides are golden brown.
Reduce the heat to medium-low and add the minced garlic to the pan, stirring constantly for about 30 seconds until fragrant.
Pour in the fresh lemon juice, using it to deglaze the pan by scraping up any flavorful brown bits from the bottom with a spoon.
Toss to coat all chicken pieces evenly. Continue cooking for another minute until the chicken is completely cooked through but still tender.
Add a handful of halved cherry tomatoes during the final 2 minutes of cooking. Serve hot with herbed butter rice, a refreshing cucumber-tomato salad, and your choice of tzatziki or coriander yoghurt dip.
