INGREDIENTS:
- Cauliflower, 1 medium, cut into bite-sized florets
- Oil for frying
- Corn Flour 3 tbsp
- Rice Flour 2 tbsp
- All-Purpose Flour 2 tbsp
- Salt to taste
- Onion, 1 large, diced
- Ginger-Garlic Paste 1 tsp
- Green Chili Paste 1/2 tsp
- Water 1/2 cup
FOR THE SAUCE:
- Oil 1 tbsp
- Garlic Cloves 4-5 finely chopped
- Ginger 1 tsp finely chopped
- Red Chili Flakes 1/2 tsp
- Red Chili sauce 1 tbsp
- Soy Sauce 1 tsp
- Honey 1 tsp
- Vinegar or Lemon Juice 1 tsp
METHOD:
Serving Size: 5-6
Blanch the cauliflower florets in hot salted water for 5-6 minutes. Drain and set aside.
In a large bowl, mix the flours, ginger-garlic paste, green chili paste, salt, and water to make a thick batter.
Heat oil in a large pan over medium heat. Coat the cauliflower florets in the batter and deep fry until they are crisp and golden brown. Remove them and keep aside.
Heat 1 tbsp oil in a pan and add minced garlic and ginger. Sauté for 30 seconds until fragrant.
Add diced onion and saute on high heat for 1-2 minutes so they remain crunchy. Add chili flakes, tomato ketchup, red chili sauce, soy sauce, vinegar, and honey.
Add the fried cauliflower florets back into the pan and toss to coat them evenly with the sauce.
Garnish with fried dried red chilis and cashews.
Serve sweet and spicy cauliflower bites paired with either fried rice or noodles, and cucumber salad.
