INGREDIENTS:
- Idly/dosa batter 3-4 cups
- Onion 1 chopped
- Carrot 1 grated
- Green chilis 2 chopped
- Oil to shallow fry
METHOD:
Serving Size: 5-6
In a bowl, mix together onion, carrot and green chilis.
Heat 1 tsp oil in a pan and drop a small ladleful of the batter. Sprinkle some of the onion mixture over it and fry on a medium heat for a minute or two.
Flip it over and let it cook for a minute.
Transfer to a serving plate. Repeat the process with the remaining batter.
Serve them with coconut chutney.
NOTE:
You can make these uthappam instantly with semolina. Soak the semolina in yoghurt for 15-20 minutes. Adjust the consistency by adding water. The rest of the process is the same as above.
