INGREDIENTS:
- Long grain rice 4 cups (cooked and cooled overnight)
- Shrimp 300 grams (peeled and deveined)
- Carrots 1 cup diced
- Green Peas 1/2 cup
- Capsicum 1 diced
- French Beans 10-15 chopped
- Onion 2 medium, thinly sliced
- Garlic Cloves 5-6 crushed
- Black Pepper Powder 1 tsp
- Mixed Herbs 1 tsp
- Vegetable oil
- Salt as required
METHOD:
Serving Size: 4-5
In a pan, add about 1 tbsp of oil. Add crushed garlic and sauté for 30 seconds. Add sliced onions and stir until they turn translucent.
Add the vegetables and cook for a few seconds. Add the shrimp and season with salt.
Cook the shrimps for 5-6 minutes. Do not overcook or they will turn rubbery.
Add in the rice. Throw in the black pepper powder and mixed herbs.
Stir fry for a minute or two. Serve shrimp fried rice hot with sauteed vegetables and yoghurt.
