Spicy Garlic Paprika Fish

 INGREDIENTS:

  1. Fish Fillet 4-5 (cubed)
  2. All-Purpose flour 1 tbsp
  3. Oil 100 ml
  4. Onion 1 finely chopped
  5. Garlic Cloves 6-7 minced
  6. Smoked Paprika Powder 1 tbsp
  7. Tomato 2 pureed
  8. Cumin Powder1 tsp
  9. Caraway Seeds 1/2 tsp
  10. Vegetable Stock or Water 150 ml
  11. Coriander Leaves 2 tbsp Chopped

METHOD:

Serving Size: 2-3

Season the fish with salt on each side. Then coat each fish with flour.

Heat oil in a deep-frying pan. Cook the fish just enough to brown it a little on each side. Remove the fish and set aside.

To the same pan add the caraway seeds. Let the seeds splutter, then add onion and cook for about 4-5 minutes until softened. But do not brown the onions.

Add in the garlic and cook for another 30 seconds.

Pour in the tomato puree and vegetable stock and let it simmer. When the sauce is reduced by half add cumin powder, smoked paprika powder and salt.

When the spices are mixed in the oil, return the fish to the pan. Cover the pan and cook on low heat for 5-10 minutes or until the fish is cooked through.

Stir occasionally and add a splash of water if needed to keep the sauce from drying out.

Garnish with fresh coriander leaves and serve spicy garlic paprika fish with herbed rice.

Lyonnaise Potato

  INGREDIENTS: Potatoes 500 grams peeled and sliced into 1/4th" thick roundels Butter 3 tbsp Vegetable oil 3 tbsp Onions 4 thinly sliced Paprika powder 1/2 tsp Parsley 1/2 tsp Black Pepper Powder to taste Coriander stalks 1 tsp finely chopped  Salt as per taste METHOD: Serving Size: 3-4 Wash the potatoes thoroughly. Hashbrowns

  INGREDIENTS: Potatoes 2 large size Onion 1 large sliced Garlic Powder 1 tsp Corn flour 1 tbsp Rice flour 1 tbsp Eggs 2 large (Optional) Oil 3 tbsp Butter 3 tbsp Salt as per taste Black pepper powder 1/2 tsp METHOD: Serving Size: 3-4 In a fry pan heat 1 tbsp butter and sauté the onion until golden brown and reserve.  Peel and grate the potatoes on a large-holed box grater. Rinse the grated potatoes well until the water runs clear.  Drain the potatoes and place them on a clean towel. Twist the towel to remove as much moisture as possible. Transfer the grated potatoes to a bowl. Add caramelized onion, garlic powder, salt, black pepper powder and garlic powder. Break the eggs (if using) and add corn flour and rice flour.
