INGREDIENTS:
- Shrimp 400 grams
- Cajun Seasoning 1-2 tsp
- Garlic Cloves 5-6 minced
- Bell Peppers (mixed colors) 1 cup, thinly sliced
- Spinach 1 cup, roughly chopped
- Fresh Cream 1/2 cup
- Milk 1/4 cup to adjust consistency
- Salt and Black Pepper to taste
- Oil 1 tbsp
- Butter 1 tbsp
- Coriander Leaves for garnish
METHOD:
Serving Size: 6-7
Marinate the shrimp with salt and Cajun seasoning.
Heat oil in a pan and sear the shrimp on both sides for 1-2 minutes. Remove and set aside.
Melt butter in the same pan and add garlic. Saute until fragrant.
Add bell peppers and cook until slightly soft. Add spinach and cook until just wilted.
Add cream, milk, salt, and pepper. Simmer gently until the sauce slightly thickens.
Return shrimp to the pan and stir to coat with the sauce. Garnish with chopped coriander leaves.
Serve with buttered rice, corn salad, and tzatziki or yogurt dip.
