INGREDIENTS:
- Eggs 2-3
- Spinach 1/2 cup
- Cheese 1/4 cup grated (cheddar, mozzarella)
- Onion 1 large, thinly sliced
- Green Chili 1-2 finely chopped
- Salt to taste
- Black Pepper Powder to taste
- Butter 1/2 tsp
- Oil 1 tsp
METHOD:
Serving size: 1
Crack the eggs into a bowl and add salt and pepper to taste. Whisk until frothy.
Heat butter and oil in a pan over medium heat. Add onions and green chilis and saute for a minute. Add spinach and cook until just wilted.
Pour the egg mixture over the sauteed spinach. Let it cook for a few seconds.
Sprinkle grated cheese evenly on top. Cover the pan and cook until the eggs are set and the cheese has melted, then remove the cover.
Gently fold the omelette in half and slide it onto a plate.
Serve hot, paired with buttered toast and a light salad.
