INGREDIENTS:
- Potatoes 2 medium, peeled and shredded
- Onion, 2 thinly sliced
- Green Chilis 2-3 chopped
- Coriander Leaves chopped 1 tbsp
- Eggs 1 (Optional)
- All-Purpose Flour 3 tbsp
- Baking Powder 1/4 tsp
- Cajun Seasoning 1 tsp
- Salt and Pepper to taste
- Vegetable Oil 3 tbsp

Grate the potatoes and squeeze out the excess water.
In a large bowl, combine grated potatoes, onion, green chilis, coriander leaves, egg (if using), flour, baking powder, Cajun seasoning, salt, and pepper. Stir until well combined.
Add a little garlic powder and onion powder to the potato mixture if you prefer a zesty flavor.
Heat oil in a large skillet over medium-high heat. Drop large spoonfuls of batter into the hot skillet.
Gently flatten the batter with a spatula and cook until golden brown and crispy on both sides.
Serve hot with apple sauce and sour cream.
